BALSAMIC SALMON SALAD
(Eating for Life p. 111)

2 portions new potatoes, cubed
1 Tbs teriyaki marinade
2 cloves garlic
1 TBS parsley, minced
12 oz salmon fillets
4 C mixed greens
1 Tbs basil leaves, chopped
1 Tbs oregano, chopped
1 Tbs olive oil
2 Tbs balsamic vinegar
1 lemon, halved
pepper to taste
1. Steam potatoes until tender
2. mix teriyaki marinade, garlic and parsley in small bowl
3. preheat broiler. Lightly coat a broiler pan with cooking spray. Place salmon skin side down, and brush with teriyaki marinade.
4. broil approx 6 inches from broiler until the fish is cooked and flakes easily with fork, 8-10 min.
5. while salmon is cooking, combine salad greens, basil, oregano, olive oil and balsamic vinegar in medium bowl and toss.
6. divide tossed salad between two plates. layer portions of potatoes and broiled salmon fillets over salad greens.
7. top with a squeeze of lemon and pepper
